Greek Omelet
Makes 2 servings:
Ingredients:
- 2 Tablespoons water
- 2 Tablespoons dried onion flakes
- 1 cup spinach
- 6 eggs
- 1/2 teaspoon dried dill
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 15 oz. black beans, drained
- 2 roma tomatoes, chopped
- 2 Tablespoons feta cheese
Directions:
1. Place water in frying pan and add dried onion (rehydrate) and spinach (to wilt).
2. Scramble eggs and add to pan.
3. Stir in dill & dashes of pepper.
4. Drain and rinse beans and slice tomato as eggs cook. Stir occasionally.
5. When eggs are cooked. Add black beans and stir to warm through.
6. Plate omelets and top with tomato and feta before serving.
